Crystallisation: You may notice that over time, all our honey changes its structure and sets (crystallises). Additionally, you may see beautiful light patterns forming on the walls of the jar. These light patterns are commonly known across Baltic beekeepers as the "honey frost”. Crystallisation and changes in colour are all signs of natural, raw, unpasteurised, and unprocessed honey. Should crystallisation occur, gently warm the jar in hot water.
